Who said that Keto recipes had to be boring? Please eliminate any ideas that being “Keto” only involves munching on bacon, cheese and vegetables. No way! Keto diets are so diverse… when you have the right recipes.
Today I’m sharing this recipe for Keto Strawberry Chocolate Chaffles. These chaffles go beyond what you’d expect from a typical Keto breakfast. As you’d expect, it involves a base of cheese and eggs. However, these Keto Strawberry Chocolate Chaffles boast a delicious flavor profile like no other.
If you have a sweet tooth, being on a Keto diet is still a possibility! I mean, these chaffles speak for themselves. Don’t forget, I also made these Peanut Butter Chocolate Eggs that are totally Keto friendly! See? Sweet tooth totally satisfied!
Ingredients:
- 2 large eggs
- 1 tbsp heavy whipping cream, divided
- 2 oz. cream cheese, softened
- 1 tsp vanilla extract (you can replace this with a strawberry extract or flavoring to give the batter a stronger strawberry flavor)
- 1 tbsp monk-fruit sweetener (you can replace with the granular sweetener of your choice)
- 2 tbsp coconut flour
- 1 tsp baking soda
- ¼ cup unsweetened cocoa powder
- ¾ cup mozzarella cheese, shredded
- ¼ cup strawberries, diced
- ¼ cup Lily’s chocolate chips + optional 1 tbsp for garnish
- Optional 1 tbsp Swerve confectioner’s sugar for topping
Yields: 3+ mini waffles or 1 Belgian style waffle
Directions:
Preheat waffle maker to medium/high heat and grease generously.
Add softened cream cheese, eggs, whipping cream, extract or flavoring, and sweetener into a medium mixing bowl.
Using an electric hand mixer, beat all ingredients until thoroughly combined.
In a small mixing bowl, add flour, baking soda, and cocoa powder. Whisk until combined.
Slowly add flour mixture to wet ingredients and stir until combined.
Add strawberries and mozzarella – mix well. Next, fold in chocolate chips.
Add chaffle batter to waffle maker: for mini waffles, scoop ¼ cup of batter into waffle maker and cook for 2+ minutes or until done. For Belgian waffle, pour entire bowl of batter into the waffle maker or until full, then cook on medium-high for 4+ minutes or until done.
Garnish with additional toppings, if desired, like Swerve confectioner’s sugar, diced or sliced strawberries, or melted Lily’s chocolate chips.
