Keto Chicken “Pasta” with Palmini Noodles Recipe

If you follow the Keto diet, you know it’s an absolute game-changer! One of the common “fears” of going into the diet is the lack of carb intake and thus, sacrificing certain comfort foods like bread and pastas.

But fear not! With Keto, the possibilities are endless — you just have to use your imagination and a little creativity! I recently discovered these amazing keto “noodles” called Palmini Noodles. HELLO KETO PASTA! Perhaps I am late to the game in discovering these, but they were featured on the show “Shark Tank” and they are a low carb noodle substitute made from hearts of palm. Palmini noodles contain only 4g of carbs per serving.

Using these amazing Palmini noodles, this Chicken “Pasta” recipe is totally low carb, Keto-friendly and gives you that “pasta” satisfaction while staying within the diet’s guidelines!

Ingredients:

  •  1 lb. Boneless skinless chicken breast cut into bite-sized pieces
  •  ¼ C. Onion chopped
  •  ¼ C. Bell peppers chopped
  •  2 Tbsp. Olive oil divided
  •  ½ tsp. Chili powder
  •  ½ tsp. Cumin
  •  ¼ tsp. Paprika
  • ¼ tsp. Garlic powder
  • ¼ tsp. Onion powder
  • 1 Can Palmini linguini noodles rinsed well and drained
  • 1 C. Heavy whipping cream
  • ½ C. Chicken broth
  • Salt and pepper to taste

Prep Time: 15 minutes

Cook Time: 20 minutes

Servings: 4

Net Carbs: 5 net carbs per serving

Instructions:

1. Place the chicken pieces into a large mixing bowl. Add 1 tablespoon of olive oil then add the chili powder, cumin, paprika, garlic powder, onion powder. Season with salt and pepper (to taste). Mix together well to coat the chicken thoroughly.

2. Add the chicken to a large skillet, heating it on medium-high. Cook until the chicken is completely cooked through. Remove the cooked chicken and set aside.

3. Pour the remaining tablespoon of olive oil into the skillet, and add the onions and peppers. Saute for several minutes until they begin to soften and become fragrant, about 2-3 minutes.

4. Add the heavy whipping cream and chicken broth to the skillet, and stir to combine.

5. Place the palmini noodles into the skillet and coat thoroughly with the sauce.
