Today, I’m whipping up an Instant Pot Teriyaki Chicken dish – and you’ll be pleased to see how easy it is to make! Impress your family with this Asian-inspired meal, full of authentic flavor and ingredients. Plus, since it’s made in the Instant Pot, you’ll have dinner ready in no time!
Ingredients for Chicken:
- 4 chicken breasts, frozen
- 1 cup soy sauce or coconut aminos
- ½ cup chicken broth
- 2 tsp garlic powder
- 2/3 cup rice vinegar or apple cider vinegar
- 2 tbsp sesame oil
- ½ cup honey
- 4 tbsp cornstarch
- Lime wedges for serving
- Cilantro or green onion to garnish
Ingredients for Rice:
- 1 cup brown rice (you can also use white rice if you prefer!)
- 2 cups broth or water
- Juice of one lime
- 2-3 tablespoons chopped cilantro
- 1 tsp ground cumin
- Sea salt and pepper to taste
Instructions for the Chicken:
Place frozen chicken breasts in the inner pot of your Instant Pot.
In a bowl, add soy sauce, chicken broth, garlic powder, vinegar, sesame oil, honey and half of the cornstarch. Mix until all ingredients are well-combined. Pour over chicken.
Close the Instant Pot and close the valve. Cook on high pressure for 25 minutes. Once the time is up, allow for a natural pressure release.
Chop the chicken or roughly shred with a fork. Set Instant Pot to its sauté function and sprinkle chicken with remaining cornstarch. Mix and cook until the sauce thickens, around 5 minutes.
Instructions for the Rice:
In a large saucepan, bring broth to a boil. Add rice and cook according to the package. Fluff rice with a fork, and mix in remaining ingredients.
Serve the honey teriyaki chicken on a bed of the lime rice. Sprinkle with extra cilantro or diced green onion on top and a squeeze of lime, if desired.
Recipe notes:
If using coconut aminos, reduce the amount of honey to â…“ cup.
