This Instant Pot meal has been a total life saver for our family’s weeknight dinners. I like to serve a variety of cuisines but sometimes, I don’t have the time to whip up an elaborate meal.
My Instant Pot Sweet and Sour Chicken and Rice is the weeknight dinner solution our family needed. The taste is out of this world and it’s incredibly easy to make – that’s a huge win for me!
Now that my family’s gotten a taste of this meal, they can’t get enough of it! I make it regularly (nearly every week!), giving them something to look forward to at the end of the day.
How to Make Sweet and Sour Chicken and Rice in Your Instant Pot
Ingredients:
- 2 large chicken breasts, cubed
- 1 egg
- 1 cup milk
- 2 cups cornstarch
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tablespoons butter
- 1 bottle of sweet n sour sauce (Your favorite brand)
- 1 cup of uncooked rice
Cut chicken into bite-sized cubes and place them in a plastic bag. Sprinkle salt and pepper over chicken and shake to coat.
Crack an egg in a bowl and add milk, whisk and set aside. Add cornstarch to another bowl and set aside.
Dip chicken in egg mixture and then dip in cornstarch, coating each one evenly.
Place coated chicken gently on a plate and set aside. Repeat until you have coated all of your bite-sized chicken.
Tap the sauté setting on your Instant Pot, melting 1 tablespoon of butter.
Add chicken and cook until the edges are crunchy. Remove chicken from the Instant Pot and insert into the steamer pan.
Pour sweet and sour sauce over chicken and put the lid on top.
In the second steamer pan, add the rice, 2 tablespoons of water, and 1 tablespoon of butter in pan. Close lid.
Place the rice pan on top of the chicken pan and put both pans in its sling. Set aside.
Wipe out the bottom of the instant pot and add trivet, 1/4 cup of water, and place pans in the Instant Pot.
Seal the lid and set the seal (according to your IP’s directions). Set on manual pressure for 20 minutes and let the instant pot release the steam. Do not do a quick release.
Once the steam is released, fluff the rice. Serve chicken and sauce over rice, topping each serving with green onions, if desired.
