Ingredients:

  • 4 large chicken breasts
  • 2 cups buttermilk
  • 2 tbsp olive oil
  • 2 tsp dried Italian spice
  • 6 medium tomatoes
  • 8 slices mozzarella cheese
  • 4 large fresh basil leaves
  • 1 tbsp garlic minced
  • ⅔ cup balsamic vinegar
  • 2 tbsp honey

Instructions:

Soak chicken breasts in buttermilk for at least 2 hours (but preferably, overnight).

Chop tomatoes and basil. Add in a bowl and mix together – set aside.

Preheat oven to 350 degrees.

Add olive oil to iron skillet and heat on medium.

Add chicken breasts to the heated skillet and brown on each side for about 5 minutes. Remove from skillet and transfer to a cutting board.

Insert toothpicks into each one of the chicken breasts to keep the opening closed.

In a small bowl, mix together balsamic vinegar, honey and garlic.

Place chicken breasts back into skillet, and pour balsamic mixture around chicken.
