My Balsamic Glazed Chicken is an impressive platter with the most interesting flavor profile. It’s marinated in buttermilk, which is key in preserving its perfect consistency and texture. Plus, it’s generously garnished with a tomato basil topping, adding more deliciousness in every bite.

Ingredients:
- 4 large chicken breasts
- 2 cups buttermilk
- 2 tbsp olive oil
- 2 tsp dried Italian spice
- 6 medium tomatoes
- 8 slices mozzarella cheese
- 4 large fresh basil leaves
- 1 tbsp garlic minced
- ⅔ cup balsamic vinegar
- 2 tbsp honey
Instructions:
Soak chicken breasts in buttermilk for at least 2 hours (but preferably, overnight).
Chop tomatoes and basil. Add in a bowl and mix together – set aside.
Preheat oven to 350 degrees.
Add olive oil to iron skillet and heat on medium.
Add chicken breasts to the heated skillet and brown on each side for about 5 minutes. Remove from skillet and transfer to a cutting board.
Slice a pocket in each breast, about ⅔ of the way through.
Brush each chicken, from the inside out, with olive oil. Next, season with the Italian seasoning, salt and pepper, ensuring that the inside of the chicken breasts are being seasoned, as well.
Place one slice of mozzarella cheese inside each chicken breast.
Insert toothpicks into each one of the chicken breasts to keep the opening closed.
In a small bowl, mix together balsamic vinegar, honey and garlic.
Place chicken breasts back into skillet, and pour balsamic mixture around chicken.
Put skillet into the preheated oven and bake 15-20 minutes, or until meat thermometer reads 180 degrees F (be sure to insert it in the center of the chicken breast for the most accurate reading).
Remove toothpicks from each chicken and spoon liquid onto breasts. Top each breast with a slice of mozzarella cheese. Allow to bake just until cheese melts.
Remove to serving platter and spoon more sauce onto each breast.
Top each chicken with tomato and basil mixture.
