Rocky Road really takes me back to my childhood. I remember when we had guests and my parents would purchase those cardboard boxes of Rocky Road ice cream. That mixture of marshmallow, nuts and chocolate is such a delightful and comforting combination to me.

Ingredients:
- 2 cups semi-sweet chocolate chips
- 1 – 14oz can sweetened condensed milk
- 1 tsp vanilla extract
- 2 cups mini marshmallows
- 1 ½ cups chopped almonds
Directions:
Line a 9×9 pan with foil and grease the inside of the pan. Set aside.
Add chocolate chips and evaporated milk in a microwave-safe bowl. Microwave for 1 minute and stir. Microwave in increments of 10-20 seconds if necessary until chocolate is completely melted and smooth.
Add vanilla extract and mix.
Next, add marshmallows and almonds and fold carefully.
Pour fudge mixture into greased pan and refrigerate until completely hardened.
Cut into small squares – serve and enjoy!

This Rocky Road Fudge is out of this world! I’m fusing together rocky road’s classic elements in one delicious batch of fudge: chocolate, marshmallows and nuts. Plus, it’s no-bake, making it a very easy dessert to whip-up.
