Well, in comes my Oven-Baked Zucchini Fries. They’ve got the perfect amount of “crunch.” Plus, they’re even tastier when accompanied with my homemade Avocado ranch. Your family will be begging for seconds (and thirds!).
I absolutely love cooking with zucchini, so coming up with this recipe was a breeze! You’ll be so impressed with how easy they are to make. Plus, I love the fact that there’s absolutely no deep-frying involved. Nope, no way. These Zucchini Fries are completely oven-baked – so no mess, and no hassle of oil, large pots, etc.
Ingredients for the Zucchini Fries:
- 3 large Zucchini squash
- 2 eggs
- 1 tablespoon of water
- 1 ¾ cup of panko breadcrumbs
- ¾ cup of grated parmesan cheese
- 1 teaspoon of salt
- ½ teaspoon of ground black pepper
- 1 teaspoon of chili powder
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
Ingredients for the Avocado ranch:
- 1 avocado, mashed
- ½ cup of mayonnaise
- ½ cup of sour cream
- 3 tablespoons of milk
- 1 teaspoon of dill, dried
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of parsley, dried
- 1 teaspoon of lime juice
- A pinch of salt
Prep time: 20 minutes
Bake time: 20 minutes
Fridge time: 15 minutes
Servings: 4
Instructions to make the Zucchini fries:
Preheat oven to 425 degrees F.
Begin by cutting your zucchini in half and then into thin pieces.
In a bowl, whisk together eggs and water until completely combined.
In another bowl, mix together dry ingredients: breadcrumbs, parmesan cheese, salt, black pepper, chili powder, garlic powder and onion powder.
Grease a large baking sheet with olive oil or butter spray.
To begin the coating process, dip a zucchini slice in the egg and water mixture. Drain and then coat it in the bread crumb mixture. Carefully place it on the greased baking sheet.
Repeat for the remaining zucchini slices.
Bake for 18-20 minutes and serve immediately.
Instructions to make the Avocado ranch:
In a large bowl, mix together all ingredients, adding salt if desired.
Place the mixture in the refrigerator for 15 minutes. This will allow the salt, garlic and onion powder to set and dissolve.
