Everyone loves a good brunch! Today’s recipe is a perfect and easy way to get pancakes on the table without having to flip them on the griddle one by one – perfect for when you need to get a spread on the table in a jiffy!
By now you should already know how much I love using my Instant Pot! It’s quick, convenient… and it can do just about anything (I’ve made everything from Instant Pot Coffee Cake to Instant Pot Spaghetti and Meatballs). Today, I’m showing you how to put together an Instant Pot Pancake Bites Brunch Recipe! The key to this recipe is to use a silicone egg mold – so easy to use and they pop right out!
These pancake bites are incredibly adorable and perfect for feeding a hungry crowd. They’re best served warm with tons of delicious toppings like Nutella, fruit, honey and maple syrup. You can change up the ingredients – add bananas and cinnamon, blueberries or strawberries, or you can even add in some chocolate chips! I hope you and your loved ones can make wonderful memories while enjoying a lovely brunch with these tasty pancake bites.
Ingredients:
- 2 cups all-purpose flour
- 3 tbsp granulated sugar
- 1 tbsp baking powder
- Pinch of salt
- 1 egg
- 2 tbsp melted unsalted butter, cooled
- 1 1/2 cups milk
- 1 tsp vanilla extract
- Berries, bananas, chocolate chips or any other mix-ins of your choice (optional)
Directions:
In a large bowl, combine flour, sugar, baking powder and salt.
Add egg, milk, cooled melted butter and vanilla extract. Mix until well combined (although some lumps are to be expected).
Spray silicone mold with cooking spray and divide the mixture into each section of the mold – about ¾ full each.
You may add a few berries into each section (just don’t add so many that the batter goes beyond ¾ filled in the silicone mold with the fruit in).
Cover the silicone tray with its proper covers, then cover again with some aluminum foil. Be sure it’s tightly wrapped around the edges – this will help avoid any condensation from seeping into the pancake bites.
Add 1 ½ cups water into the inner pot of the Instant Pot, followed by a trivet.
Add the silicone trays right on top of the trivet (you may stack them, but only 2 at a time).
Close the lid and seal the valve according to your IP’s directions. Set on manual high pressure for 8 minutes.
Once the time is up, allow for a 5 minute NPR.
Remove the molds from the IP and open them.
Turn the silicone molds over on a plate and carefully tap the bottoms to remove the pancake bites.
Serve warm with your favorite pancake toppings like maple syrup, jam, Nutella, honey and extra fruits and berries.
Notes:
Since these pancake bites are better served warm, you may reheat in the microwave for about 45 seconds.
The pancake bites keep for 3 days in the fridge.
The aluminum foil is vital since not all mold covers fit properly – they will keep the water from entering.
This recipe can make up to 20 bites, depending on the size of your silicone molds (or also, if you use fruits and other add-ins).
You swap in other berries like chopped blackberries and chopped strawberries.
