With what feels like a never-ending heatwave this summer, cooling off with these Healthy Ombre Fruity Yogurt Pops is such a welcomed treat. They are perfectly refreshing and are layered with coconut, strawberry, and blueberry flavors!
Growing up, popsicles were always my top summer snack. Now, I’m thrilled to make my very own and know exactly what go into them. These Ombre Fruity Yogurt Pops are made with delicious and healthy ingredients – no refined sugars or corn syrup. I’m never hesitant to allow my little one to snack on these daily!
Take a look at these super cute frozen treats. The ombre effect is just beautiful and you’ll be blown away with their delicious flavor profile. Best of all, they’re super easy to make. Here’s how:
Ingredients:
- 1/2 cup of yogurt
- 3/4 cup of heavy cream
- 1/4 cup + 1 tablespoon of honey
- 1 tablespoon of coconut cream or milk *
- 1 handful of blueberries *
- 3-4 large strawberries *
- ¼ cup of unsweetened coconut shavings *
- Popsicle sticks
- Popsicle molds
*add more or less depending on your taste
Prep time: 15 minutes
Freeze time: 3 – 8 hours
Servings: 4 popsicles.
Instructions:
Begin by adding a third of the yogurt with the strawberries to a blender. Blend until smooth. Pour the mixture into a small bowl and set aside.
Next, add half of the remaining yogurt and the blueberries into the blender and blend until smooth. Add to a small bowl and set aside as well.
Add the remaining yogurt, coconut cream and coconut shavings into a small bowl and mix thoroughly.
Add the heavy cream into a large bowl. Whip until it’s smooth and slightly thicker.
Add 1/3 honey to the strawberry yogurt, 1/3 to the blueberry yogurt and 1/3 to the coconut yogurt. Fold the heavy cream into each bowl and combine until smooth.
Spoon equal amounts of blueberry, strawberry and coconut cream into the popsicle molds. Add the different yogurts in layers according to your design.
Push a popsicle stick into each section, inserting it about half-way down into the mold.
Freeze for 3-8 hours before serving and enjoy!
