Beef stroganoff has so many delicious elements to it: noodles, beef, cream. I can hardly resist a plate – it is definitely a perfect comfort food for any time of the year. My family always loves this meal! There are hardly any leftovers whenever I whip this up for dinner.
Beef stroganoff dates back to mid-19th century Russia. With my Instant Pot rendition, I used the dish’s classic ingredients of beef, broth, egg noodles, mushrooms and cream, but it is extra easy to make when using your Instant Pot!
And by the way, you can easily omit the mushrooms if you have super picky eaters. I think it tastes great either way! Check out the recipe below to see how you can make it for your family tonight!
- 1 pound ground beef
- Salt and black pepper (for seasoning)
- 2 tablespoons vegetable oil, divided, plus more as needed
- 1/2 medium sized onion, diced
- 1 tbsp garlic, minced
- 1 tbsp tomato paste
- 1 1/2 cups beef broth
- 1 tbsp butter
- 5 oz mushrooms, sliced (optional)
- 1 tbsp cornstarch
- 3 tbsp cold water
- ¼ cup sour cream
- 8 oz egg noodles, raw

Cook time: 20 minutes
Total time: 30 minutes
Set Instant Pot to sauté mode. Once it is hot, add 1 tbsp of oil and ground beef. Brown the beef and set aside.
Add in one more tablespoon of oil and butter – allow butter to melt. Next add mushrooms and sauté for about 5 minutes. Set aside.
If required, add an additional tablespoon of oil. Add onions and sauté for three minutes or until softened and caramelized. Add garlic and sauté for an additional one minute.
Add beef broth and ground beef.
Close lid to the Instant Pot and seal. Pressure cook on high for four minutes and allow for a manual pressure release when the time is up.
In a separate bowl, mix together cornstarch and water. Add into the Instant Pot.
Set Instant Pot to sauté mode. Allow for the ingredients to simmer and bring gravy mixture to a boil.
Add sour cream and cooked mushrooms. Mix well.
Next, add egg noodles to the pot. Be sure to mix thoroughly so that that each noodle is covered in the gravy mixture.
Press cancel on the Instant Pot. With your noodles still raw, lock the lid in place and allow your noodles to cook in the sauce for about 10 minutes. Open the lid, and make sure all of the noodles are cooked to your liking.
Once the noodles are cooked, transfer to a bowl and top with fresh parsley. Enjoy!
