Growing up, ice cream sandwiches were always a favorite summer treat in my home. Biting into them was always so satisfying: it was the perfect amount of vanilla ice cream, sandwiched between two delicious chocolate wafers. Summer was never complete without these yummy frozen treats!
Today, I’m excited to share my Ice Cream Sandwich Cake recipe. You’ll be surprised with how it is to put together. Plus, I’ve topped mine with a generous amount of sprinkles – giving it a burst of color (and cuteness!).

Ingredients:
- 1 box (12 sandwiches) regular size ice cream sandwiches
- 1 cup coarsely chopped Oreo cookies
- 1 (16 ounce) container frozen whipped topping, thawed and divided
- Sprinkles
Yields: 12 servings
Directions:
In a large bowl, add chopped cookies and 2 cups whipped topping. Fold together and set aside.
Unwrap all of the ice cream sandwiches and create a base layer of 6 ice cream sandwiches.
With a spatula, top the ice cream sandwich base with an even layer of the cookie and cream mixture.
Add the final layer of ice cream sandwiches with the remaining 6 ice cream sandwiches.
Frost the entire cake with remaining cookie and cream topping.
Garnish the top of the cake generously with sprinkles.
Place in the freezer and free until ready to serve.
